Hey guys, it’s been a full month since that last buffalo recipe… and I think you’re gonna love this Crispy Buffalo Quinoa Bites Salad!

Since it’s been a while, I’m definitely due for another recipe share.

Honestly, every Monday needs at least a little buffalo sauce. Or, you know what? Maybe some margarita chicken and guacamole quesadillas. Actually, why not both? That would make for a pretty great Monday, don’t you think?

You know what else would make a Monday better?

SLEEP!

Which, let’s be real, I never get enough of. And with summer just around the corner, the days keep getting longer and longer. More daylight means more work time, and more work time means less sleep. But honestly? I’m totally okay with that. I love the long days, and I’m beyond excited for summer to finally arrive.

Wait—hold on. I’m getting way ahead of myself here. How am I already talking about summer? How is Memorial Day literally two weeks away? That’s insane!

And since we’re on the topic of Memorial Day, get ready for some seriously good food in the next few weeks. Think grilling, tons of fruit, marshmallows, and—oh yeah—lots of ice cream. Plus some random stuff thrown in here and there. Did I mention ice cream?

It’s gonna be so good.

But today, let’s talk salad.

I’m all about quinoa. For one, it’s healthy, which is awesome. But mostly, I love it because it goes with pretty much anything. Plus, you can shape it into these adorable little crispy, moist bites—perfect for when you open the fridge and realize the chicken you thought you had was actually swiped by your older brother the day before.

Yep, these bites are a lifesaver. (Well, more like a lifesaver for my brother, because otherwise, I’d be very upset.)

Speaking of buffalo sauce, I think my dad is losing his mind a little more every day.

Remember those buffalo shrimp sandwiches I made? And how I told you my dad wanted to open a buffalo restaurant? Well, these quinoa bites sealed the deal for him. He actually said he likes them better than buffalo chicken.

He is dead serious about this restaurant idea. Like, really serious. It’s starting to freak me out.

Anyway, the base of these bites is mostly quinoa, plus about a cup of white beans and an egg to hold everything together. Just crisp them up in a skillet and drown them in buffalo sauce.

Oh, and the dressing! It’s a mix of homemade buttermilk ranch and blue cheese because I couldn’t decide between the two (no surprise there). I spent, like, twenty minutes of my hike debating which one to use before finally just combining them. My brain never lets me make an easy decision—it’s always back and forth.

Then, obviously, you have to drench the whole thing in extra buffalo sauce and blue cheese (or cheddar if you’re not into the moldy stuff). But around here, we’re all about that funky blue cheese.
